Polly’s Brew Co. – The Lights That Lead These Streets DDH IPA (SALE BB: 10/12/21)

It’s been an age since we last dropped a pyramid dry-hop beer! A technique first introduced by our owner Sean after delving into a rabbit hole of brewing tricks and magic, this simple but hugely effective process involves starting big and gradually scaling down the additions as the intensity goes up, meaning we’re able to accentuate each individual hop, creating a more complex beer. The Lights That Lead These Streets takes this technique and ups it to the max; Mosaic takes the lead, with progressively smaller additions of Citra, Ekuanot and Talus thrown in for good measure. The result is a huge, juicy explosion of flavour, bursting with those typical Polly’s mango, pineapple, and papaya notes with some herbal complexity to boot.
