Polly’s Brew Co. Hold Fast Drifting IPA

It could be said that we’re full on Idaho 7 converts here at Polly’s HQ. A varietal that we embraced to the max when we first got out hands on a small amount, it seemed to fall off our radar for a short time before roaring back to prominence in 2021; the latest crop being absolutely something else, and a bonafide favourite with our brewers whenever it lands on our brew plans. With Hold Fast Drifting, we wanted to make a special tribute to this incredible varietal – utilizing not only T90 pellets, but a newly acquired Cryo hop version to boot. The result is an IPA that is positively dripping with fresh cut pineapple notes, with apricot, papaya and red grapefruit to round off the tropical punchbowl of flavour. With finishing notes of black tea and pungent pine notes aplenty, this is a full on Polly’s banger of an IPA.
