Polly’s Brew Co. – Hi, Everything’s Great DIPA

Sometimes, you’ve just got to take a look at your available hops and just go “Yep, we’re going as big as possible today”. With our Double IPAs being arguably our strongest output in terms of how dialled in we have our processes at this point, we’ve given our brewers the opportunity to let their hair down and have some fun with the dry hop bill on this beer. Hi, Everything’s Great features a quite frankly insane seven different hop varietals in equal measure, with a medley of in house favourites Simcoe, Mosaic, Enigma, El Dorado, Ekuanot, Citra and Columbus combining to create a Frankenstein’s monster mega haze-bomb, maxed out, juicy DIPA. Expect to find tangerine, pineapple, papaya and jolly tot notes, backed up with just a hint of grassy bitterness and herbal complexity to boot.
