Polly’s Brew Co. – Controversy Between Deep TIPA

We feel like our TIPA game is really coming on leaps and bounds at Polly’s HQ. A style that scared us half to death before we got our hands on it has now become almost second nature to us, and we feel is improving with each subsequent brew. Controversy Between Deep takes all the techniques we’ve employed to previous TIPAs and notches it up a level thanks to our use of a blend of our bespoke LA3 strain along with Nottingham Ale yeast. Nottingham does the heavy lifting, bringing the ABV comfortably up to TIPA town, whilst LA3 does what LA3 does best; holding the frankly ridiculous dry-hop charge of Mosaic, Simcoe, Vic Secret and Sabro in full suspension; working in tandem to bring all those stonefruit, tangerine, mango, and coconut aromas and flavours to the fore.
