Polly’s Brew Co. – Bubble Dream IPA

A lockdown 1.0 favourite returns for another run around! We first brewed Bubble Dream back in those scary first couple of weeks of lockdown, when we’d battened down the hatches, everything was still incredibly uncertain and we were just brewing as much as we could to keep the brewery ticking over. A strong contender for the new in-house favourite IPA when we first produced it, and a stance that still rings true today; this beer set about smashing everything together that we love about modern day brewing. Chinook brings an old school resinous bite underlying the new school juicebomb notes from our ever dependable pairing of Azacca and Mosaic. Silky, hazy, and juiced out to the max; this is an IPA that cascades along the palate like the dream it references.
