Polly’s Brew Co. – A Fleeting Sound Triple Dry Hopped TIPA

So we’ve taken our first plunge into using Spectrum hops in the overwhelmingly popular Spectrum range released in April, where do we go next? Pure, unadulterated, “let your hair loose” beer, that’s where! We noticed that the TIPA from our Spectrum launch was, mostly, the favourite out of the four, so we’ve gone huge on this style with our biggest dry hop bill to date; utilizing 20kg each of pellet Citra and Mosaic, before supercharging again with 2kg of Spectrum Citra and Mosaic. In layman’s terms, a triple dry-hop on the cold side. The result is an absolutely intense flavour bomb of pink grapefruit, gooseberry, and lychee from the Citra, with a hearty show of tangerine, mango, and that distinctive berry medley from the Mosaic. Absolutely insane.
