Northern Monk Brewery Within And Without Raspberry & Hibiscus DIPA
This year’s well-deserving winner of our homebrew competition was Sam Thakker-Jones, who impressed us all with this Raspberry, Hibiscus, Cinnamon and Vanilla DIPA inspired by the ‘no holds barred’ approach to experimentation of many breweries he had visited in the US. The grist features a mix of oat, wheat and spelt and we added some salt to further round the mouthfeel. Hibiscus is infused at multiple stages through the brew, and we added 200g/l of Raspberry puree towards the back end of fermentation before conditioning on cinnamon and vanilla.
