THE BREWERY SAYS:

The next in our series with LeiMai sees us recreating one of our favourite soft drinks – cherry cola. We put together a grist with plenty of wheat and naked oats for mouthfeel, and chit malt to further boost the body of this low ABV sour. We backed it up with lactose and then whirlpool hopped with Mosaic for notes of blueberry and ripe pineapple to underpin the layers of fruit to come. We went with an even split of sweet and sour cherry to bring the tartness we were looking for, whilst maintaining a juicy sweetness on the back end. As a nod to some of the original ingredients used in cola production, we also added a little vanilla at conditioning stage, before working to bring some distinct cola aromas to complete the experience.
