The first Wild co-ferment from Ascension, and it’s an absolute banger!
950g/L of fresh supermarket-rejected strawberries were added to a fermentation of 2022 season Braeburn juice, then aged on the lees for 6 months.
The resulting cider hybrid offers bright acidity, huge notes of fresh strawberry, tart red apples, with a finish reminiscent of freshly-bitten strawberry seeds, and a wonderful yoghurty richness from the lactic acid produced in the fermentation.
An absolute smasher, we’re so proud to offer this as our first Wild-Ferm, experimental Fruity Bev.
