A symbol of the deceptively simple refinement of la pâtisserie française, this little flash of lightning has sparked wonder in young and old ever since its emergence in the 1850s. Now, our maître pâtissier makes no claim on the Worlds’ Best Pastry Chef Award, but when it comes to distilling delectable desserts into a drinkable format – he definitely takes le biscuit. For this contemporary reimagination of the classic French éclair, we’ve opted for a strawberry cream filling and a white chocolate fondant topping that nods to the past while keeping things decidedly du jour. Santé!
